Oven-Fried Salt & Vinegar Potato Chips

If I had to name my favorite snack in the whole entire world it would be salt & vinegar potato chips!  Crispy potatoes, tangy vinegar and salty... well salt!  LOTS of SALT!  
I have dabbled in home-made chips over the years but have never tackled these salt & vinegar lovelies til now and not to toot my own horn... but TOOT TOOT... this guys are good.  The white vinegar is just the right amount to give each chip some tang without overpowering your taste buds.  Make them for a crowd... or just for you!!




OVEN-FRIED SALT & VINEGAR POTATO CHIPS


Ingredients
  • 3 large russet potatoes, sliced 1/32 inch thick using a mandolin
  • 2 1/2 cups white vinegar
  • non-stick cooking spray
  • kosher salt
  • cracked black pepper
Directions
  1. Place potato slices into a pot and over with white vinegar.  Bring to a boil then reduce heat to medium and cook for 5 minutes.  Cover and remove from heat and allow to sit for 30 minutes.
  2. Meanwhile, preheat oven to 450ºF.  Grease 2 baking sheets with non-stick cooking spray.
  3. Drain potato slices and pat dry with paper towels.  Arrange half of the potato slices on the baking sheets.  Spray again with non-stick cooking spray and sprinkle each slices with a kosher salt.  Bake for 8 to 10 minutes until chips are golden and crisp.  Allow chips to cool on a paper towel.  Repeat with second half of potato slices.  Enjoy!!

  4. I made these tonight! They looked too good to resist! I'm pretty sure that the recipe could be tossed up in flavors such as Garlic and Herb .. Garlic and Parm cheese! BBQ -- although I'm not sure how to get the flavor? Maybe a smokey paprika would be good and dipped in a delish sour cream dip ...? :) Much love!

  5. This looks delicious. It makes me hungry. Sadly, I jsut had my braces on and I still cannot eat chips. However my cheap orthodontics told me that vinegar makes cleaning the brace easier. I wonder if this can pass.

  8. I forgot to let them sit for 30 min. after boiling them. That made them turn out a little messed up. But they taste really good. Just a little soggy. I am still going to make this recipe again.

  9. I made these tonight, and no matter what I did, they didn't crisp in the center. The outsides were crisp, but the center never did get firm. The flavor of these were amazing though and I will be making these again!

  11. I just made my first batch! I found some to be a little on the chewy side so I flipped them over and put them in the oven for another few minutes. Seemed to help crisp them up. I think I had trouble crisping them because I didn't have a mandolin and used the slicer accessory on my food processor. They looked a little thicker than your photos, but still a tasty snack! And the vinegar taste is perfect! Thanks for this :)
